  4. Take Seasoning
  5. Get 2 - 3 tablespoons Coconut oil
  6. Make ready 1 teaspoon Mustard seeds
  7. Take 1/2 teaspoon Cumin seeds
  8. Get 1/2 teaspoon Fenugreek seeds
  9. Prepare 1/4 teaspoon Turmeric powder
  10. Take 3 - 4 Shallots sliced
  11. Prepare 1/2 inch Ginger chopped fine
  12. Make ready 3 cloves Garlic chopped fine
  13. Take 1 chilly Green chopped
  14. Take 2 chillies Dry red
  15. Take 1 sprig Curry leaves

To begin making the Moru Kachiyathu Recipe (Kerala Style Seasoned Buttermilk), add the curd into a big bowl and whisk it to a silky texture. To this add water and whisk it to get to a semi thick buttermilk consistency. Heat coconut oil in a wok, add the mustard seeds and let it crackle. Prepare buttermilk - Mix curd and water in a mixi using pulse mode.

Instructions to make Buttermilk seasoned (Kachiya moru):
  1. Whisk the yoghurt and water. Mix well. or you can use a blender. keep aside.
  2. Heat coconut oil in a pan.
  3. Splutter the mustard seeds, add the cumin seeds and then the fenugreek seeds.
  4. Add the sliced shallots. after a few seconds add the chopped ginger, garlic and green chillies.
  5. A few seconds later add the broken dry red chillies. finally add the curry leaves.
  6. Let the shallots turn a light brown. reduce the flame to the minimum.
  7. Slowly add the buttermilk, stirring constantly, slowly. Make sure you don't heat it up cos then it will curdle. Make it just warm and take it off the stove.

Heat coconut oil in a wok, add the mustard seeds and let it crackle. Prepare buttermilk - Mix curd and water in a mixi using pulse mode. Water quantity depends on the thickness of the curd and the consistency of moru curry that you need. It's the best if yogurt has sour taste. Allow Moru Kachiyathu / Seasoned Buttermilk to just get warm, make sure it doesn't boil, otherwise buttermilk will get curdled.
