Moraiyo is a small seed and round in shape like a thick Semolina/Rava. Sama is one of the varieties of millet made from the seeds of the Amaranth/Rajgira Plant. Like this farali aloo sabzi (farali = for fasting) where I have used only cumin seeds + black pepper and rock salt.   1. For moraiyo:- wash and drain the grains.
  2. In a pan heat the oil or ghee add cumins and curry leaves along with green chillies, potatoes and let them cook.
  3. And saute for 3-4 minutes add tha samo and stir for a few seconds.
  4. Now add boiling water and ground peanut if using it.
  5. Stir well add rock salt cover and lower the heat. Keep checking and stirring so that it does not stick to the bottom of the pan.
  6. When all the water evaporates it's done, mix well.
  7. For aloo sabji:- Now take clove cinnamon powder crush it to get a fine powder.
  8. Heat oil in a pan medium heat. Once hot add cumin seeds let them sizzle.
  9. Then add sesame seeds they will start to pop. Add clove and cinnamon powder.
  10. Saute green chillies for few seconds add cubed potatoes and mix well.
  11. Add crushed peanuts, salt and sugar mix well and cook for 2-3 minutes.
  12. Lastly add squeeze fresh lemon juice and stir. Sprinkle chopped cilantro. Turn off the stove.
  13. Serve moraiyo with aloo sabji and buttermilk.
