  15. Make ready as needed Curry leaves

The process of making this rice is started by making tamarind paste with grounded spices and then mixing it with steamed rice. There are so many variations in preparing this rice. Heat the oil in a large skillet. Pulihora is another version of rice recipe across andhra region and south india as well.

Instructions to make Pulihara:
  1. Take 2 glasses of rice, add two drops of oil, with 1:2 water. Boil it in pressure cooker until one whistle and then put it on sim for 15 minutes
  2. Crush mustard seeds, jeera, dhaniya seeds, miriyalu, menthi seeds
  3. Slit 4 green chillies vertically and stuff tamarind paste into it. Dice ginger.
  4. Take rice, mix 1/2 spoon turmeric, 1/2 tablespoon oil, 10 grams jaggery.
  5. Take 4 table spoons oil, heat it in vat, add at 1 minute intervals100 grams ground nuts, the green chillis, ginger, red chillis, 2 stems of curry leaf, the grinded mixture, and asfoetida powder.
  6. After 2 minutes, mix it with rice. Taste and modify.
