  2. Make ready 4 springs curry leaves
  3. Take 1 cup peanuts
  4. Get 4 red chillies
  5. Get 2 tbsp oil

  7. Make ready To taste salt
  8. Make ready 1 tbsp Dhaniyalu /coriander seeds
  9. Get 1 tbsp minapagundlu/ black gram
  10. Prepare 1 tsp jeera/cumin seeds
  11. Get 1 tsp avalu/mustard seeds
  12. Take 1 pinch menthulu/fenugreek
  13. Prepare 5 garlic cloves
Steps to make Khara bhendakaya:
  1. Cut lady's finger Into even sized pieces, put a closed slit on one side of each piece.
  2. Heat kadai with oil.
  3. Add lady's finger, turmeric, salt,2 sprigs of curry leaves, 1 red chilli. Cook for 10-15 minutes. Stir in between.
  4. Heat another kadai. Add peanuts. Add 3 red chillies. After 2 minutes add dhaniyalu and minapalu. Cook for 2 minutes.
  5. Add cumin, mustard seeds, Fenugreek, 2 sprigs of curry leaf. Cook for 2 minutes or until done. Let it cool.
  6. Taste lady's finger to see if it's cooked and salt adequacy. Turn off flame. Let it cool.
  7. Once the spices mixture is cool enough, mixie it until it's soft. Add garlic. Mixie it again.
  8. Once the lady's finger cools, stuff the spice mixture into the slits.
  9. Ready to serve.
