The ingredients needed to make Veg Haleem/Gehu Khichda:
  1. Take 1.5 cup whole wheat
  2. Make ready 2 tbsp chana daal
  3. Take 2 tbsp masoor daal
  4. Take 2 tbsp urad daal
  5. Take 2 tbsp mung daal
  6. Take 1 onion
  7. Get 1 tomato
  8. Take 4 tbsp dry fruits powder
  9. Take 2 twigs Curry leaves
  10. Prepare 3 whole red chillies
  11. Make ready 2 green chillies
  12. Take 8-10 black pepper
  13. Get 3 cardamoms
  14. Make ready 1 tbsp mix whole garam masala
  15. Get 7-8 cloves garlic
  16. Prepare 1 tsp cumin
  17. Get 1 tsp turmeric powder
  18. Get 1 tsp red chilli powder
  19. Get As per taste Salt
  20. Prepare 5-6 tbsp ghee
  21. Take 7-8 almonds
  22. Prepare For Fried onion
  23. Prepare 1 sliced onion
  24. Prepare As required Oil to fry

Haleem comes up with a different combination so sometimes it calls Harees and Khichda. Many people get confused with Haleem and Khichda as it seems similar in look. Haleem is more smooth in texture while the Khichda is coarsely ground so it's not mashed as haleem. The aroma of the spices, the onions friend in ghee and ofcorse the cooked haleem takes you right to heaven.

Instructions to make Veg Haleem/Gehu Khichda:
  1. Wash and soak whole wheat in water for 4-5 hours. Dry it for an hour.
  2. Wash and soak all daals for four hours.
  3. Grind wheat in mixie jar. Remove husk. Take all spices, almond add it to soaked daal.
  4. Grind daal to fine paste. Grind wheat to coarse structure. Chop onion and tomato.
  5. Make paste of onion tomato. In a pan add 2 tbsp ghee. Saute onion tomato paste. Add sliced green chillies. Add dry spices and roast.
  6. Add Masala daal paste to it. Saute it for 5-6 minutes. Add grounded wheat. Add water and keep on stirring.
  7. Add birista. Keep on stirring. Cook on low flame. Add remaining ghee. Add salt. Stir continuously. Fry onion in oil.
  8. Serve hot haleem topped with fried onions and chopped dry fruits.

Haleem is more smooth in texture while the Khichda is coarsely ground so it's not mashed as haleem. The aroma of the spices, the onions friend in ghee and ofcorse the cooked haleem takes you right to heaven. It is indeed a very rich preparation with all that ghee (clarified butter) and those pulses/dals and those exotic spices. But, at the same time, it is a complete meal packed with proteins and some carbohydrates too. Packed with broken wheat, a range of lentils, vegetables and spices, the Hyderabadi Veg Haleem is self-contained in flavour and texture and ideal to serve as a one-dish meal.
