  15. Prepare 1 Cabbage small)
  16. Get 1 Taro ( medium)
  17. Get 1 Arum ( small)
  18. Prepare 1 Raw banana
  19. Take 1 Carrot ( big)
  20. Prepare 50 gm Parval
  21. Take 50 gm Green beans
  22. Prepare 20 gm Green mutter
  23. Prepare 1 tbsp coriander powder
  24. Take 3 tsp Turmeric powder
  25. Make ready 1 tsp Red chilli powder spoon(kashmiri mirchi)
  26. Prepare 5 tbsp Groundnut oil
  27. Make ready 25 gms Whole spices( mix)
  28. Make ready 4 Laung
  29. Make ready 15 kadi patta / curry leaves
  30. Get 3 green elaichi / cardamom
  31. Get 1 Red chilli whole
  32. Take 2 badiya
  33. Prepare 1 tbsp while black proper
  34. Take 2 tbsp asafoetida
  35. Prepare 1 tsp jeera / cumin
  36. Get 5 whole black pepper
  37. Prepare 1 tsp mustard seeds
  38. Take 10-15 sweet neem leaves
  39. Make ready 1 javitri
  40. Take 3 bay leaves
  41. Take 1 Lemon
  42. Make ready 2 Tomato
  43. Get 1 big bowl Coriander
  44. Take 1 small bowl Fenugreek leaves(-washed and soaked and cutted in small pieces))
  45. Prepare 1 small bowl Besan
  46. Get 1 medium size bowl Jaggery
  47. Take 2 tbsp Garam masala
  48. Take To taste Salt

Method For muthiya Mix all the above ingredients well. And make small balls out of it. Heat oil and deep fry it untill it become golden brown and crispy. Drop muthiya on absorbent paper and set aside.

Steps to make Kathiyawadi Undhiyu:
  1. Soak all cereals in hot water overnight and then give 4 whistles to cook it..keep aside in one bowl.Cut all small dice shaped vegetables ready in another bowl..keep aside..Make small vadi from fenugreek leaves(cut fenugreek leaves in a very small piece and add it into small bowl of besan,add turmeric powder, dhaniya powder,red chilli powder,salt as per taste asefotedia and add little bit of water till you can make vadi from it..Then stir fry it until it's golden brown,keep this aside.
  2. Take one big spoon of groundnut oil in a pressure cooker and add all khada masala like,mustard,green elaichi,kadipatta,long,dry red chilli,whole black pepper,badiya,sauf and sweet neem leaves and jeera, when mustard starts busting in hot oil put one small spoon of asafoetida into it and add all vegetables and stir for a minute
  3. Add all spices like dhaniya powder, turmeric,chilli powder,salt,tomato puree and ginger garlic paste, also add one small bowl of jaggery(it adds a lot to the taste) and cook for 3 whistles..Once cools down open the cooker
  4. Now add all the boiled cereals(strain the water)the mutter and 1 finally chopped tomato and fenugreek vadi and just taste a bit and if needed add little salt and give it just 1 whistle in cooler.
  5. Add lots of coriander leaves and serve hot..This undhiyu is full of vitamins as it contains cereals and all types of vegetables..Best for winter season
