- Make ready 1 cup mix beans socked over night
- Make ready 1 cup mix vegetables(peas,brinjal,carrot, cabbage, potato, cauliflower,green beans, strings beans)

- Prepare 1 star anise

- Take 1 tsp mustard seeds

- Prepare 6-7 curry leaves
- Get 2 black pepper
- Take 1 tsp asafoetida
- Get 2 tbsp Ginger garlic and green chilli paste
- Prepare 1 tsp turmeric powder
- Prepare to taste Salt
- Get 2 tbsp red chilli powder
- Make ready 1 tsp garam masala
- Get 1 cup vegetables stock
- Prepare 2 tsp lemon juice
- Prepare As needed Coriander for Garnish
- Make ready As needed Chapdi for serving
Chapdi Undhiyu is originated from Rajkot and it should be consumed like Daal Baati. Means before you start eating Chapdis, you should crush them with your palms/hand. Once done you should pour in Undhiyu in this, mix it and gupp it. Chopped Onions, Butter Milk and Papads goes really well with Chapdi Undhiyu.
Instructions to make Chapdi tavo:
- First of all boil the socked beans in cooker.
- Also boil the all chopped vegetables.
- After that add 5 tbsp oil in a pan, if oil is heat add star aenish, bay leaf, cloves, cinnamon, red dry chilli, cummin, mustard, curry leaves, black pepper then add pinc of asafoetida, green chopped onion, gingar garlic and green chilli paste, chopped tomato and mix well.
- Cook for 2-3 minutes and then add boiled beans and boiled vegetables and mix well.
- Then add turmeric, salt to taste, red chilli powder, 1 cup vegetables stock, lemon juice, garam masala and mix well.
- Cook for 4-5 minutes in low flam.
- Take a serving plate garnish with coriander and serve with chapdi and salad.
