  2. Take 1 inch cinnamon
  3. Get 2 cloves

  8. Take 1 tbsp roasted chana dal
  9. Prepare 4 cloves garlic

  17. Get 1 teaspoon udad daal
  18. Make ready 2 dry Red Chillies
  19. Prepare 8-10 curry leaves
  20. Prepare 1/2 teaspoon hing/ asafoetida
  21. Prepare 1 onion
  22. Get 1/2 teaspoon turmeric
  23. Prepare 1 tomato
  24. Take 2 cups mixed vegetables (potato, green peas, cauliflower, carrot green beans)
  25. Prepare as per taste Salt

Sagu is the most popular side dish for poori, set dosa, rava dosa and even for rava idli in Karnataka hotels just like vegetable kurma in Tamil nadu. It is served along with coconut chutney.

Steps to make Vegetable Sagu:
  1. Take all the ingredients for paste in a mixer jar and add half cup of water. Make a paste out of it. Clean and prepare all the vegetables for the curry.
  2. Heat oil in a pan and add mustard seeds. When it crackles, add udad daal, red chilli pieces, curry leaves and hing. Now add chopped onion, turmeric and mix everything well. When onion becomes pink in colour, add chopped tomato to it. Cook it for two minutes and add all the vegetables to it.
  3. Now add one cup of water and cover and cook the vegetables until 80% done. Now add prepared spice paste and mix everything well. Cover it again and cook it until the oil separates from the curry and all the vegetables are cooked. It will take around 8 to 10 minutes.
  4. Serve mix vegetable sagu with dosa, puri, paratha or rice.
