Veg tehri recipe - Tehri, tehari or tahari is a one pot dish originated from the Awadhi cuisine. It is mildly spicy, delicious & flavorful. It is most commonly eaten for a meal in North India. This is a variation of the Veg pulao recipe, but includes spice powders too.

The ingredients needed to make Veg tehri:
  1. Get 1 small size carrot
  2. Take 1 medium size potato
  3. Make ready 1 medium size capsicum
  4. Get 3-4 beans
  5. Take 2-3 cauliflower florets
  6. Get 2 Tomatoes medium size
  7. Prepare 1/2 inch ginger chopped)
  8. Take 2 green chillies(split)
  9. Prepare 75 gm paneer
  10. Take 1 cup Rice
  11. Prepare 2 cup water
  12. Get 2 cardamon
  13. Make ready 2 small bay leaves
  14. Prepare 1 tbsp cumin seeds
  15. Make ready 1 tbsp dhania(coriander) powder
  16. Prepare 1/2 tsp Turmeric powder
  17. Make ready 1 tbsp red chilli powder
  18. Prepare 2 tbsp curry powder
  19. Get 1 tbsp garam masala
  20. Get to taste salt

Instructions to make Veg tehri:
  1. 1st wash and cut the veggies into cube shape and keep aside. Now in a pressure cooker heat 4 tbsp of oil/ ghee/ butter. Into it add cumin seeds, bay leaves and cardamom.
  2. Now when the cumin seeds starts to splutter add all veggies (except capsicum if not it will over cooked.) saute it for 2-3 mins then put chopped ginger and chillies to it again fry it in a high flame to 5 mins. slow down the flame, then add all powder Masalas one by one into the veggies, saute it for 3-4 min let the spices get well set with the veggies
  3. Add tomatoes, capsicum and salt (as per taste) into it.
  4. Wash One cup of rice, (here I have taken Scented Basmati rice) drain it and add to the veggie mixture give a stir and add 2 cups of water (double water according to the rice). close the lid. In a medium flame cook till one whistle remove from gas keep aside. Mean while fry the paneer with some salt and pepper and keep aside.
  5. Open the lid of the pressure cooker add 1 tbsp ghee (optional) put the fried paneer give a stir keep aside. Your Veg Tehri is ready to serve now. enjoy it with onionRaita or plain curd.
