Veg tehri recipe - Tehri, tehari or tahari is a one pot dish originated from the Awadhi cuisine. It is mildly spicy, delicious & flavorful. It is most commonly eaten for a meal in North India. This is a variation of the Veg pulao recipe, but includes spice powders too.

The ingredients needed to make Veg tehri:
- Get 1 small size carrot
- Take 1 medium size potato
- Make ready 1 medium size capsicum
- Get 3-4 beans
- Take 2-3 cauliflower florets
- Get 2 Tomatoes medium size
- Prepare 1/2 inch ginger chopped)
- Take 2 green chillies(split)
- Prepare 75 gm paneer
- Take 1 cup Rice
- Prepare 2 cup water
- Get 2 cardamon
- Make ready 2 small bay leaves
- Prepare 1 tbsp cumin seeds
- Make ready 1 tbsp dhania(coriander) powder
- Prepare 1/2 tsp Turmeric powder
- Make ready 1 tbsp red chilli powder
- Prepare 2 tbsp curry powder
- Get 1 tbsp garam masala
- Get to taste salt
Serve with chilled yogurt and spicy curry on the side. Vegetable tehri recipe is a close cousin of biryani or pulao. This all made in one-pot rice based dish with wonderful aromatic spices makes a quick and easy to make lunch! Tehri or tahiri is a close cousin of biryani or pulao.
Instructions to make Veg tehri:
- 1st wash and cut the veggies into cube shape and keep aside. Now in a pressure cooker heat 4 tbsp of oil/ ghee/ butter. Into it add cumin seeds, bay leaves and cardamom.
- Now when the cumin seeds starts to splutter add all veggies (except capsicum if not it will over cooked.) saute it for 2-3 mins then put chopped ginger and chillies to it again fry it in a high flame to 5 mins. slow down the flame, then add all powder Masalas one by one into the veggies, saute it for 3-4 min let the spices get well set with the veggies
- Add tomatoes, capsicum and salt (as per taste) into it.
- Wash One cup of rice, (here I have taken Scented Basmati rice) drain it and add to the veggie mixture give a stir and add 2 cups of water (double water according to the rice). close the lid. In a medium flame cook till one whistle remove from gas keep aside. Mean while fry the paneer with some salt and pepper and keep aside.
- Open the lid of the pressure cooker add 1 tbsp ghee (optional) put the fried paneer give a stir keep aside. Your Veg Tehri is ready to serve now. enjoy it with onionRaita or plain curd.
