In a large pot over medium-high heat, heat oil. This has to be the best home-made chicken curry I have tasted / made. It's a recipe that a friend gave me after she made it for a dinner party. Since said party, almost all guests have either asked for the recipe or have asked her to make it for them.

Instructions to make Chicken curry:
  1. Heat oil.Saute onion till dark brown
  2. Make a puree of tomatoes,green chillies,ginger and garlic.
  3. Add fried onions in tomatoes to make a thick paste
  4. Add paste in oil again and saute for 5 mins on high.Add all the spices.
  5. When oil leaves sides, add chicken.
  6. Put 1 glass of water,cover it and let it cook on sim for 45 mins.
  7. After 45 mins,add kasoori methi and fresh coriander in a thick gravy. You can adjust the gravy according to your taste.
  8. Serve hot with roti,naan,tandoori fulka or rice!
