The ingredients needed to make Kaari Chawal:
- Get 750 gm Mutton (prefer shoulder)
- Prepare 2 Onions sliced
- Prepare 2 Tomato chopped
- Get 2 tbsp ginger garlic paste
- Get 1 tsp Red Chilli powder
- Take 1 tbsp Dhania powder
- Prepare 1 tbsp Zeera powder
- Take 1 tsp Haldi powder
- Get to taste Salt
- Get 1 tsp Black pepper
- Get as needed Oil
- Take 1 tbsp Red Chilli powder
- Get leaves Few curry
- Prepare 2 tbsp Tamarind paste
- Get 1 cup Thick Coconut milk
- Prepare 1 tsp Zeera whole
- Take 1 tsp curry masala powder to be grounded
- Prepare 100 grms Cashew
- Get 50 grms Roasted Peanuts
- Take 100 grms Roasted chana dal(putane ke dal)
- Get 50 grms Sesame seeds
- Get 2 Cloves
- Get 1/2 tsp Fennel seeds
- Get 3-4 Black pepper
- Make ready 1" Cinnamon stick
- Make ready 4-5 Star anise
- Make ready 3 Red chillies dry
- Make ready 1/2 tsp Dry ginger
The main ingredient of this masala are cashew and star anise. Star anise is a very strong spice with intense and peculiar aroma. I'm using many ingredients but few are optional like pumpkin seeds and almonds. Kaari Chawal - A traditional bohra dish.
Instructions to make Kaari Chawal:
- First make the Kaari masala.
- Dry roast all the whole spices. Roast the peanuts, sesame seeds and chana dal too
- In a mixer all all the Curry masala ingridents and grind to a fine powder
- Take the mutton pcs add the ginger garlic paste salt and pepper, onion and tomatoes and other dry spices and boil the mutton till 6 vessels
- Take oil in a big pot and add the zeera
- Add the red chilli powder
- Add 250 grms of the Curry masala prepared
- Fry the masala till it turns golden and nice aromas spreads
- In the masala add the mutton stock along with the pcs
- Add 2 tbsp tamarind paste
- Add coconut milk
- Let the curry simmer for 30 to 45 mins
- Enjoy the Kaari with khamiri roti and rice
