Steps to make Cucumber iittoos (vellarikka thenga arachathu):
  1. Peel the cucumber,remove seeds and cut into small cubes.
  2. Cook cucumber in pressure cooker with half teaspoon turmeric powder and salt.
  3. Grind the ingredients written for grinding
  4. Take frying pan,add 1 tablespoon coconut oil,when oil is hot add mustard seeds, fenugreek seeds.
  5. Then add shallots,green chili and curry leaves,when its brown add coriander powder and chili powder.
  6. To this add grinned mixture.
  7. Next,add this mixture  to cooked cucumber.
  8. Mix well.
