  2. Make ready 25 gm ginger

Pork Fry or Pork Ularthiyahtu is a must in Christian homes based at Thrissur during all functions and get-togethers. Bring water to boil and reduce flame to the lowest. Pork koorka ularthiyathu is a traditional Pork dish from the Thrissur region in Kerala, a classic preparation with Panniyirachi and Koorka (Chinese Potato). Koorka and Pork is a phenomenal combination with incredible flavours.

Steps to make Pork ularthiyadhu:
  1. Saute chopped onions into coconut oil as per requirement and cook it until golden brown in a cooker. Add chopped ginger and garlic to this and allow it to be cooked properly until raw smell is gone or brown. Add green chillis to this.
  2. To this cooked mixture add fresh bay leaves, curry leaves, salt as per taste and two tablespoons of turmeric powder. Add diced pieces of pork and mix properly. Allow three whistles in the cooker for proper cooking of pork.
  3. In a flat bottom pan, take sufficient amount of oil. Once oil is heated up, add four tablespoons of chilli powder and coriander powder each. Once this is properly cooked, add the pork cooked and cooled in the cooker. Add pepper powder to this as per your taste. Keep stirring occasionally until all the water has disappeared and the fat from the pork starts to melt. Allow pork to cook in this fat until it becomes crispy and dry. Once done, check for salt and pepper. Garnish with curry leaves.
