  1. Get 1/3 rd Toor Daal
  2. Prepare 1 Lemon sized Tamarind ball
  3. Take 2 cups cubed Vegetable (White pumpkin, yellow Cucumber, brinjal, carrots, lady's finger etc)
  4. Make ready 4-5 Drumstick pieces cut lengthwise
  5. Get 1 chopped Tomato
  6. Make ready 1 Green Chillies slit (optional)
  7. Make ready 1/2 tsp+1/4 tsp Turmeric
  8. Make ready to taste Salt
  9. Make ready 3 tbsp chopped Coriander leaves
  10. Get For Masala:
  11. Get 1/3 cup grated Coconut
  12. Prepare 2 tsp Urad Dal
  13. Make ready 2 tbsp Coconut oil
  14. Get 4-5 dry Red Chillies
  15. Make ready 1/4 tsp Fenugreek Seeds
  16. Prepare 3 tablespoon Coriander seeds
  17. Prepare 1 tbsp Chana Dal
  18. Make ready 4 Shallots or 1/2 onions chopped
  19. Make ready 2 sprigs Curry Leaves
  20. Get For Seasoning:
  21. Get 2 tsp Coconut oil
  22. Take 1/4 tsp Hing
  23. Get 1 sprig Curry Leaves
  24. Prepare 2 dry red chillies
  25. Take 1 tsp Mustard Seeds

Usually Sambar is prepared when left over vegetables are there. Kerala Sambar is different from the typical Sambars made in the other South Indian states. Kerala Sambar is made using a mixture of different vegetables whereas the other sambhar is made using a single vegetable. Steps to make Kerala Sambhar:
  1. Soak tamarind in warm water for 45 minutes
  2. Clean toor dal. discard the water
  3. In pressure cooker, add dal, turmeric and water. pressure cook until done
  4. Mash dal. keep it aside
  5. Heat oil in a pan, add dals and fenugreek seeds. saute until brown
  6. Add coriander seeds, dry red chillies, shallots/onion and curry leaves. mix
  7. Add coconut and saute until golden brown
  8. Allow to cool completely
  9. Pressure cook vegetables for 1 whistle with little water and 1/4 tsp turmeric
  10. Grind cooled mixture with water to smooth paste
  11. Add dal, tamarind water, ground paste, tomatoes, salt, bhendi to cooked vegetables
  12. Bring to boil, simmer and cook for 15-20 minutes
  13. Heat oil in a small pan. add hing and splutter mustard seeds
  14. Add dry red chillies and curry leaves. saute for 2-3 seconds.
  15. Add coriander leaves seasoning to sambhar. mix well.
  16. Serve hot with rice/idli/dosas etc

Kerala Sambar is made using a mixture of different vegetables whereas the other sambhar is made using a single vegetable. The vegetables mostly added to Sambar are the following :-* Potato Kerala Sambhar Recipe.
