  1. Heat 3 cups of water in a pan. Add Toor Dal, add 1 teaspoon salt. Bring to a boil and let it simmer for 20 minutes on slow heat until cooked.
  2. In heavy bottom pan add 2 tablespoon oil and heat on medium heat. Add cumin seeds, mustard seeds, onions, bell peppers, vegetable masala, Ginger/Garlic, Methi, curry leaves, chilli pepper.  Cook 2 minutes and add 1/4 cup water. Add Squash and cook 10 minutes covered - add a little water if necessary. Now add tomatoes and potatoes and cook 10 mts.
  3. Add cooked lentils and add Heeng and simmer on slow heat for 5 mts. Serve hot.
