- Get 1 tbsp ghee
- Prepare 4 tbsp refined oil
Put the Groundnut oil into a pan and add to a high heat. Once hot add the Cumin and Fennel seeds until they begin to crackle and pop. Add the chopped onions to the pan and reduce the heat to medium. While the onions are cooking, mix together the Garlic Puree, Ginger Puree, Chilli Powder, Curry Powder, Tumeric and a splash of water to make a paste.
Steps to make Chicken Rogan Josh:
- Smear salt and black pepper to the chicken pieces and set aside.Heat oil in a nonstick pan and fry the sliced onion crispy brown.Reserve some crispy onion and make a paste of the rest alongwith curd,sesame and fennel seeds.Roast 1 tomato.Make a pulp of it in the grinder.
- Fry the chicken pieces in the remaining oil.Add ghee and sprinkle jeera,half crushed garam masala and hing. When it splutters add the ground wet paste,tomato puree,salt,kashmiri red chilli powder,kitchen king masala and add the chicken pieces.Fry till oil leaves sides.Add 1 cup water,pinch of food colour and cook chicken in low flame till done.Add fresh cream and toss till moisture dries up and oil floats on top.
- Garnish with chopped coriander and mitha attar.Chopped green chillies may be added.Serve with naan, paratha or fried rice.
