The ingredients needed to make Idli Sambhar:

  2. Take 1 cup Tuar dal
  3. Take 1 cup chopped cauliflower

  11. Prepare 2 chopped green chillies
  12. Take 5-6 curry leaves
  13. Make ready 1 pinch Asofoetida
  14. Get 1 finely chopped onion
  15. Prepare 1 finely chopped tomato
  16. Prepare 1 tablespoon tamarind pulp
  17. Get 7-8 garlic cloves
  18. Take 2 tablespoon oil
  19. Prepare FOR IDLI
  20. Take 1 cup semolina
  21. Take 1 cup curd
  22. Make ready to taste Salt
  23. Take 1/2 teaspoon Black Pepper Powder
  24. Take 1 teaspoon eno salt
  25. Take as needed Oil for greasing

Step by step photos: Firstly prepare sambar powder by roasting all the spices required and then grinding them into fine powder. Heat oil in a wok and add mustard seeds. Once they start spluttering add curry leaves,dry red chillies,asafoetida and garlic cloves. Fry well and add roughly chopped shallots.

Steps to make Idli Sambhar:
  1. FOR SAMBHAR- Add washed toor dal, salt and pepper, turmeric powder, asafoetida, mix vegetables with four cups water in a pressure cooker.
  2. Close the lid and cook for 4-5 whistles or until done.
  3. Add oil in a pan. Add mustard seeds, chopped garlic & curry leaves in it.
  4. When they crackle add onion and soute them till they become transparent.
  5. Add tomato & green chilli in it & soute for 5min.
  6. Add salt and pepper, Sambhar powder & stir well.
  7. Add boiled dal & tamarind pulp in it. Stir well and cook for five minutes.
  8. Serve hot with rice, idli, dosa or vada.
  9. FOR IDLI- Take semolina in a bowl.
  10. Add curd, salt and pepper in it. Mix properly.
  11. Add eno salt in it.
  12. Boil water in a idli cooker.
  13. Grease the idli stand.
  14. Pour the mixture in idli stand.
  15. Place the idli stand in idli cooker and cover it.
  16. After 8-10 min. Switch off the flame and rest it for five minutes.
  17. Put idli with the help of knife.
  18. Serve hot with Sambhar.
