  1. Prepare 1 cup rava / semolina / suji
  2. Make ready 1 cup curd / yoghurt
  3. Take 1/2 tsp salt
  4. Get As required Water

  8. Make ready 1/2 tsp Mustard seeds
  9. Get Handful Curry leaves
  10. Prepare Handful Coriander leaves

The masala idli is made by giving little twist to your regular plain idli. Usually prepared as a breakfast fare with a good dose of lemon juice and fresh coriander as garnish. Wash Urad dal soak them in enough water in the morning, grind the dal in the evening to a smooth paste. The batter must be fermented and has a good rise.

Steps to make Masala idli:
  1. In a large pan roast 1 cup rava for 5 minutes or till it turns aromatic.
  2. Allow it to cool completely, and transfer roasted rava to a mixing bowl, Add in 1 cup curd, ½ tsp salt and combine well without forming any lumps.
  3. Allow to rest for 20 minutes or till rava / sooji absorbs water, again add ¼ cup water or as required to prepare idli batter consistency, just before steaming the idlis, add in ¼ tsp eno fruit salt or a pinch of baking soda and give a gentle mix.
  4. Pour the batter immediately onto a greased idli plate. steam them on a medium flame for 15 minutes or till the idli are cooked completely. Idli is ready.
  5. Chop Idlis and keep aside. Make bite size pieces and don't chop finely. In a pan add oil, 1/2 tsp mustard seeds, few curry leaves and 1/2 tsp turmeric powder.
  6. Add chopped Idlis and pinch of salt. mix well and tell it to simmer 2-3 mins.
  7. Turn off the flame add chopped coriander leaves and mix well. Masala Idli is ready to serve.
