The ingredients needed to make Cocktail Idlis:
  1. Take 1 cup semolina (sooji or rava)
  2. Get 1 cup curd
  3. Prepare 1/2 cup water
  4. Prepare 1 tsp Eno fruit salt

  7. Prepare As needed Oil for brushing
  8. Prepare Tempering
  9. Take 2 tbsp oil

  11. Make ready 2 stems of curry leaves

Add the salt and pour a little mixture into the greased idli moulds. Cocktail idlis are just mini idlis tossed in idli podi and ghee served as starter or snack. In few places I have seen many colored idlis arranged in skewers along with sauteed bell peppers. I always used to think toddlers and kids will be fascinated by this healthy and tasty snack.

Steps to make Cocktail Idlis:
  1. Dry roast the semolina till it is aromatic. Remove from fire and allow it to cool.
  2. Mix in semolina, curd, water, and salt to form a smooth paste. Let it stand for a minimum of 10 minutes so that the semolina can soak in the liquids.
  3. When ready to cook, add in 1 tsp of Eno fruit salt. Mix well stirring in one direction only.
  4. Fill in the water into steamer to the desired level making sure it does not touch the idli mould.
  5. Grease the idli mould. Pour in the idli batter uptil three-fourths. This ensures that the idlis have space to rise.
  6. Cook for 10 minutes or until the idlis are cooked. Let it stand for 5 minutes.
  7. Demould the idlis and keep aside.
  8. Heat oil in a pan.
  9. Add in the mustard seeds and cook until they crackle. Add in the curry leaves.
  10. Mix in the idlis. You can also add a bit of salt or red chillies here.
  11. Serve hot.

Very easy, just make mini idlies and keep it in hot pack. Just before serving, you can make it ready. First heat a tblsp of ghee in a non-stick kadai and in low flame, add the idli podi, give it a quick stir.
