  2. Take 1 cup Raw Rice
  3. Prepare 1 cup Urad Dal
  4. Get 1 tsp Crushed pepper
  5. Prepare 1 tsp Cumin
  6. Get Leaves Curry
  7. Get 1 generous pinch of Ginger Powder
  8. Make ready 1 pinch asafoetida
  9. Take Salt as per taste

The idlis are cooked in bamboo casings lined with dried "mandharai" leaves. The mandharai leaves add to the flavour of the idlis. The batter for the idlis is mixed with spices and steamed. These Kanchipuram idlis are also knows as "koil idli".

  1. Wash and soak the rice and urad dal. Grind into a smooth batter. Add salt and mix and keep aside to ferment for 7-8 hours or overnight.
  2. Before making idlis, add all the other ingredients and give it a good mix. Now take steel glass and Grease it with ghee or oil. Pour 3/4 of the glass and steam it for 10-15 minutes or until done. Cool and demould. Serve hot with chutney and enjoy.
