These Kovil (Temple) idlis, doesn't look like our usually idlis, they look different, because they are steamed using mandharai leaves, which adds an unique taste to the idlis. The idlis are cooked in bamboo casings lined with dried "mandharai" leaves. The mandharai leaves add to the flavour of the idlis. The batter for the idlis is mixed with spices and steamed.

Instructions to make Kanchipuram idly/Kovil idly:
  1. In idly batter mix Coriander Leaves Then heat oil + ghee, add mustard and jeera.
  2. When it splutters, add all the ingredients (mentioned under seasoning) one after the other. When dal turns golden brown, add the seasoning to the batter and mix well.steam atlest 15 min
  3. You can steam the idlis in steel cups or tumblers. I cooked in steel cups(vatki).
  4. Idly serve with coconut chutney or sambar
