It's a fiery red spicy coconutty curry full-on flavor with a whole lot of freshly ground spices. This dish was in my to-do list for a long time and I was waiting to visit India to make it. Grind the coconut along with the rest of the fried masala to a thick paste. Fry the remaining two onions (chopped) in oil well.

  6. Heat 1 tbsp oil, add the marinated chicken, stir fry for 2-3 mins
  7. Add the ground masala paste, mix well
  8. Add salt to taste, bring to a boil, cover & cook on low heat until done
  9. Add 1/8 tsp grated nutmeg, 3 tbsp chopped coriander leaves, mix well and take off heat
  10. Serve hot with rice or pulao
