  18. Get 1 tsp Salt

  20. Prepare 2 whole dry red chilli (sliced)
  21. Prepare 2 sprigs curries leaves
  22. Take 5 garlic clove
  23. Make ready 1/2 tsp mustard seeds
  24. Get 6 fenugreek seeds
  25. Take 1 tsp ghee

Dalcha is popular among Indian Muslims who originated from South India. In Malaysia, if you happen to attend any Muslim wedding, dalcha is a must accompaniment for the rice. Mostly dalcha is prepared with mutton rather than chicken. If you ask me mutton dalcha is more delicious than chicken dalcha.

Steps to make Chicken Dalcha:
  1. Marinate the chicken with 1/2 tsp salt, 1 tsp ginger garlic paste, 1/2 tsp red chilli powder and turmeric for an hour.
  2. Pressure cook lentils with 2 cups of water for 4 whistles or till lentils are tender. - Soak tamarind in 1/2 cup warm water for 15 minutes, mash and strain to get tamarind water.
  3. Soak tamarind in 1/2 cup warm water for 15 minutes, mash and strain to get tamarind water.
  4. Heat oil in a pan, add caraway seeds, cinnamon, peppercorn, cloves and cardamom and let them splutter.
  5. Add onions, chilies and saute till they get soft and brown in colour.
  6. Add remaining ginger garlic paste and fry till raw aroma goes away.
  7. Add remaining salt and red chilli powder, coriander powder and saute for a min. - Add 1/4 cup water and cook the spices for a min more.
  8. Add chicken and fry till it starts browning, for approx 10 mins.
  9. Add the boiled lentils, tamarind water, cover and cook till the chicken is cooked.
  10. For baghar, heat ghee in a frying pan and add all the baghar ingredients. - Once they splutter add the baghar to the Dalcha and cover immediately.
  11. Let the flavors of the bagar get infused with the gravy. - Garnish with coriander and serve hot.

Mostly dalcha is prepared with mutton rather than chicken. If you ask me mutton dalcha is more delicious than chicken dalcha. Add garam masala and crushed kasoori methi and simmer till completely cooked. Usually, Dalcha is made with mutton and a little bit of mutton fat. Dice the mutton into small pieces and set aside.
