The ingredients needed to make Handi chicken curry:
  1. Take 1 kg & 250 gm chicken
  2. Prepare 1/2 kg onion
  3. Prepare 50 gm garlic cloves
  4. Get 25 gm ginger

  8. Prepare 1 bowl makhana / lotus seed

  12. Get 1/2 tsp kashmiri red chilli powder
  13. Make ready 3-4 tsp coriander powdee
  14. Take 2-3 garam masala powder / whole spice powder
  15. Make ready 2 bay leaves
  16. Make ready 2 cardamom
  17. Take 2-4 black cardamom
  18. Take 1 tsp kasuri methi
  19. Prepare 2 pieces mace(javitri)
  20. Get 300 gm oil
  21. Take to taste Salt
  22. Get as required Water

Instructions to make Handi chicken curry:
  1. Take all ingredients like onion slices,garlic cloves,ginger,green chillies,watermelon seeds and makhana and cashew.
  2. Roast makhana and cashew in oil until golden colour minimum 30 sec. Now blend well with seeds and prepare smooth paste.
  3. Take onion,garlic, ginger and chillies paste in bowl and some spices in plate.In the paste mix some red chilli powder, turmeric powder, kashmiri red chilli powder,coriander powder and garam masala powder.
  4. Another plate take. Some bay leaves, 2 cardamom, some mace, black cardamom and dry kasuri methi. Take some oil in pan,fry Hard spices for 10sec then add chicken to fry at least 1min.
  5. After 1min,Now keep the chicken outside the bowl, fry finely chopped onion till golden colour. Now add onion paste with ginger garlic and all spices.
  6. Continuesly stir the spices..when oil is separated then add chicken and stir atleast 1min. Now add water and salt acc to need.
  7. Now chicken curry is ready. Serve with chapati,rice and lemon and onion rings.
